The much-anticipated 2021 Cyrus Creek Cabernet is a jewel with a striking balance of fruit and complexity. Elegant aromas of black cherry and pomegranate combined with the complex minerality for which Diamond Mountain District Cabernet is so renowned. These bright fruity notes are complimented by subtle hints of vanilla and baking spices adding a layer of complexity to this rich and full-bodied Cabernet Sauvignon. There is a pleasing balance between the fruitiness and structure of this wine. This exquisite wine is ready to drink now or in the next five to seven years. For optimal appreciation, its best opened at least one hour before serving.
Description
The Bianco Family has been making wine from grapes grown in our vineyards adjoining the historic Cyrus Creek for over five decades. This Cabernet Sauvignon is produced entirely from the renowned Clone 4 variety which is particularly suited to the austere volcanic rock and gravel of our east-facing hillside vineyards. The result is a wine of finesse and elegance. Only two hundred and twenty five cases were produced. We hope you enjoy this wine as much as we enjoyed making it for you.
Tasting Notes
The bouquet opens with enticing aromas of ripe black cherries and juicy pomegranates. These bright, fruity notes are complemented by subtle hints of vanilla and baking spices, adding a layer of complexity. On the palate, this Cabernet Sauvignon is rich and full bodied. The black cherry and pomegranate flavors are prominent, but with a sweet cedar note delivering a luscious and mouthwatering experience. There's a pleasing balance between the fruitiness and the structure of the wine. The finish is long and satisfying, with a sweet cedar note that lingers elegantly, providing a hint of warmth and a touch of spice. The tannins are well integrated, offering a smooth, velvety texture that enhances the overall drinking experience.

Vineyard Notes
The Cabernet grapes are estate grown and come exclusively from The Bianco Family Vineyard in the Diamond Mountain District of Napa Valley. The 2021 vintage will be remembered for low yields with intensely-flavored, small-sized berries and a smooth uneventful harvest season. The season started off with very little rain, leading to the 2nd year of drought conditions in Napa Valley. Low yields led to more concentrated flavors and better wine.
Winemaker Notes
The grapes came in small-berried, deep black-blue and loose on clusters. Following a four day cold soak, the fermentation took twelve days followed by a nine day extended maturation. After which the wine was pressed and transferred to new French Oak Taransuad barrels for aging. The wine was bottled in the Spring of 2024 after 26 months of maturation in the barrel.
